- 1 1/2 cups sweet potato (1/2″ cubed, about 1 medium-sized sweet potato)
- 2 tsp. brown sugar
- 4 cups curly kale (packed chopped, about 1/2 bunch)
- 1/4 cup roasted and salted pepitas
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. maple syrup
- 1 tsp. Dijon mustard
- 2 cloves garlic (microplaned or finely minced)

I doubled the dressing as I had more wild rice & sweet potatoes - it was delicious!

This was sooo yummy!! I had some leftover steamed rice so I used it in place of the wild rice and made a little extra sauce as my sweet potato was a little more than called for and I wasn't sure how dry it would be with the alternation. It turned out great and we all loved it! I will definitely add this to our "regular rotation".
