- 1 Tbsp. olive oil
- 2 tsp. olive oil
- 1 onion (large, sliced)
- 1 red bell pepper (seeded and cut into strips, or 3 red)
- 1 orange bell pepper (seeded and cut into strips)
- 1 yellow bell pepper (seeded and cut into strips)
- 2 cloves garlic (finely chopped)
- 1/4 cup chicken broth
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. marjoram (dried)
- 1/2 tsp. kosher salt
- 1/8 tsp. freshly ground pepper (or as desired)
- 2 cups turkey (cooked shredded, or chicken)
- 3 Tbsp. balsamic vinegar
- 2 cups cheese (I used goat and fresh mozzarella-but feel free to use your favorites)
- 2 plum tomatoes (large, sliced)
- 1 cup arugula (or baby spinach for garnish, optional)
