- 1/2 cup mozzarella (shredded vegan, – I used Follow Your Heart)
- 4 cups spinach
- 2 gluten (free tortillas – I used tortillas with a blend of brown rice, amaranth and mesquite)
- balsamic vinegar (splash of, optional)
- 1 pinch salt (+ more for the spinach)
- 1 pinch sugar

Poor. The method for caramelising the onions didn’t work at all. Lacks flavour even with real mozzarella in it.
