- 1 large zucchini (approx. 8 inches x 2 inches)
- 1 pt. grape tomatoes (halved)
- 4 oz. fresh mozzarella (cubed into 1/2-inch pieces)
- 2 Tbsp. fresh basil (thinly sliced)
- 2 tsp. red wine vinegar
- 1/2 tsp. kosher salt
- 1/4 tsp. pepper
- 2 Tbsp. olive oil

Directions
- Special Equipment: This recipe uses a KitchenAid® Stand Mixer with a Spiralizer Attachment.
- Bring 3-4 quarts water to a boil in a large pot. Salt water with 2-3 tablespoons salt.
- Fill a large bowl with ice water. Trim ends off zucchini and cut to fit spiralizer attachment. Use fine spiralizing blade to make “zoodles”. Use kitchen shears or a knife to cut zoodles into desired lengths.
- Cook the zucchini noodles in salted water for 45 seconds. Drain and place in ice water to stop cooking. When chilled, drain zucchini noodles. In large bowl, add zucchini, tomatoes, mozzarella and basil. In a small bowl, add vinegar, salt and pepper, then whisk in olive oil. Add dressing to salad and toss to coat.

Made with frozen veggie spirals. It was still tasty but presentation is better with fresh veggies.
