Description
On hot summer days, we all just want to avoid having to turn the oven on. This refreshing gluten free caprese salad requires no cooking and brings all the flavors of the mediterranean to your lunch or dinner table. Mozzarella pearls are marinated in a basil and anchovy sauce before being spread over a bed of sliced fresh tomatoes. Serve with fresh basil leaves and pepper. The basil sauce can also be made without anchovies for vegetarians.
Ingredients

- 10 grams fresh basil
- 4 anchovy fillets
- 1 garlic clove
- 1/2 chili pepper (dried)
- 100 mL olive oil
- 150 grams mozzarella (pearls or 2 mozzarella balls)
- 4 whole tomatoes (ripe)
- ground black pepper

Directions
- Place the basil, anchovies with a little of their oil, garlic, chili pepper, and olive oil in a food processor and blend until smooth. Set aside.
- Add the mozzarella to the basil sauce and leave to marinate in the refrigerator for 1 hour.
- Finely slice the tomatoes and arrange on a serving plate.
- Top with the mozzarella and basil sauce.
- Season with black pepper and serve.
