  • 8 ounces mozzarella cheese (grated or crumbled)
  • 2 tomatoes (medium sized, any kind, chopped)
  • 1 handful basil (chopped)
  • 15 empanada (discs, can use store-bought or make your own empanada dough for baking or for frying)
  • 1 egg (whisked - to be used as egg wash)
  • garlic sauce (Basil)

    Unfortunately there were no empanada shells at my local store and due to covid all the AP flour is out of stock on the island I live on. So I used spring roll wraps instead and made spring rolls with the ingredients. I also added bacon! Sooooo yummy

    I made these with the balsamic chimichurri sauce for a get together with friends and they were a huge hit!
