- 500 grams aubergine (preferably ‘Black Beauty’, cut into 2.5 cm dice)
- 1 tsp. salt
- 200 grams swordfish (cut into 2 cm wide pieces)
- 1/2 lemon (squeezed)

- 1 Tbsp. olive oil
- 80 grams celery (cut into 1 cm dice)
- vegetable oil (to deep fry, I used sunflower oil)
- 1 Tbsp. olive oil
- 120 grams onion (sliced)
- 100 grams red pepper (/capsicum, cut into 2cm thick slices)
- 1 Tbsp. caper (in sea salt, rinsed, soaked for 10 min and drained)
- 50 grams pitted olive (halved)
- 200 mL passata (/cc)
- 1/2 tsp. dried oregano
- 4 Tbsp. red wine vinegar (acidity 7%)
- 1 tsp. honey (I used orange blossom honey)
- 1 tsp. unsweetened cocoa powder
- 20 grams raisins
- salt
- pepper (to taste)
- 20 grams almond
- fresh basil (to garnish, optional)
