Description
This Cantonese-inspired rice is studded with a ton of delicious ingredients. This dish features ham, peas, and eggs which all add their own unique flavors to this festive dish. A bit of dried shrimp adds tons of flavor. This dish is great paired with some meat or a big pile or sauteed vegetables. If you have any leftovers, they reheat nicely so you can enjoy this dish again.

- 250 grams rice (Thai)
- 2 eggs (lightly beaten with a fork)
- 2 slices ham (diced, or a tray of diced ham)
- 1 can peas
- 1 green onion (with stem)
- peanut oil
- 1 Tbsp. dried shrimp (optional, but adds lots of flavor)

Directions
- Cook the rice (if possible in a rice cooker), let cool.
- In a wok, cook the eggs (omelette style) with a dash of oil. Once cooked, remove from wok and cut into thin strips. Finely chop the onion and fry only the white bits in the wok. Also chop the onion's green stem and set aside. Then add the rice, ham, shrimp, and peas. Brown, while stirring regularly until the rice is hot.
- Before serving, add the omelette strips, and sprinkle with chopped green onions. Serve with black soy sauce (optional).

Really nice! I added bamboo and some soy and oyster sauces. I will definitely make it again.
