- 13.5 oz. sausage (JOHNSONVILLE® Smoked Rope, cut ¼-inch slice pieces)
- 1 Tbsp. vegetable oil
- medium onion (diced)
- green bell pepper (diced)
- celery ribs (diced)
- garlic (cloves, minced)
- Cajun seasoning (or teaspoons Creole)
- 15 oz. red beans (each, rinsed and drained)
- 1 cup chicken stock
- 1 tsp. hot sauce
- bay leaf
- kosher salt
- cooked rice (for serving)
- parsley leaves (Chopped, to garnish, optional)

Directions
- In a large stock pot, cook and stir sausage in oil over medium heat until browned; 3-4 minutes. Set aside.
- Add the onion, bell pepper and celery. Cook and stir until tender; 3-4 minutes.
- Stir in garlic and seasoning until fragrant; about 1 minute.
