I had to add more syrup to get it to coat well. Also, the bacon goes from not yet to overdone in nanoseconds. I recommend to pat bacon dry after cooking.

I made this for a brunch yesterday and it was a huge hit! I added extra maple syrup to loosen up the mixture, perfect!
