- 60 mL grapeseed oil (plus extra for prawns)
- 100 grams onion (finely diced)
- 5 cloves garlic (chopped)
- sea salt
- 50 mL mezcal
- 8 prawns (jumbo green, about 100g each, cut in half, de-veined, shell on)
- 1 jalapeno (finely sliced)
- 1/4 red onion (finely sliced)
- 1 handful coriander leaves
