- 2 guajillo chile peppers (dried, coarsely chopped)

- 12 oz. mixed mushrooms (nameko, oyster, etc)
- shoyu (splash of, or soy sauce, to taste)
- 1/3 cup fresh lime juice (or to taste)
- 1/4 cup chopped cilantro (in each bowl, for serving)

- roasted cherry tomatoes
- 4 shallots (medium, peeled)
- 3 stalks lemongrass (tender centers roughly chopped)
- 2 chile peppers (serrano, deseeded)
- 2 slices ginger (peeled and roughly chopped)
- 4 lime leaves (makrut, or 3 makrut lime + 2 Meyer lemon, torn and smashed)
- 1 meyer lemon (optional)
- 1/2 tsp. fine grain sea salt
