- 10 oz. spanish chorizo (chouriço, linguiça,or, sliced into 1/4-inch coins)
- 1 Spanish onion (large, diced)

- 2 garlic cloves (sliced; don’t be afraid to go for a third or fourth. The Portuguese love their garlic)
- 6 potatoes (medium, peeled and diced)
- 1/2 homemade chicken stock

I always forget how much I love this soup! It’s hearty and delicious and I used the same recipe in the instant pot which meant it was finished in 15 minutes. I added some rosemary, oregano, and smoked paprika to boost the flavor and served it with more than one slice of chorizo. My husband hates kale and he loves this soup.
