This dish is delicious I varied a few ingredients. Instead of plain rice I used a brown and red rice with quinoa I purchased at Costco. I also added scallops and langostinos along with the shrimp and sausage and chopped them into medium pieces, adding everything to the onion and garlic. Instead of tomato sauce, I used 1/2 cup of Bertolli alfredo sauce to the chicken broth. I filled the peppers and baked for 25 minutes. There was about 1 cup of leftover filling which was delicious. It reminded me a little of shrimp and grits ! Great recipe.
