    It didn't knock my socks off. Something missing from the veggie mix, maybe? I did like the Cajun spice! Maybe more of that if I try the recipe again.

    Excellent! Didn't take the time to stuff the breasts. Sautéed vegetables then chicken. Put vegetables over chicken and cooked in oven. Added cheese last 10 minutes.

    So I did some modifications... which is the only reason I'm giving three stars. I can't give five for something I didn't actually do. I just marinated the thin-ish sliced chicken breast in canun seasoning, olive oil, and lime juice. While that marinated, I sauteed some green pepper, red pepper, onion, and garlic. Baked the chicken at 375 for 30 minutes. After 30 minutes, I threw some of the pepper concoction on the breasts and put on some shredded pepper jack. Threw it back in until melted. I served it with orzo. Three and a half cups chicken broth. Bring it to a boil. One and half cups orzo. Simmer for about 12 minutes. When just about done, throw in the remainder of the pepper concoction and some cajun seasoning. Finish off with 1/4-1/2 cup of cream (I used fat free half and half, but you do you, Boo!) Throw in whatever cheese didnt make it in your chicken and stir to blend and melt. It was BANGIN!

    Very good. I made a bunch of the filling, mushrooms, peppers and onions and just served that on the side. Next time I'll throw some cheese on top of that as well. Served with a side salad.

    Everyone loved it! I used yellow onion instead of white, and Button mushrooms instead of Cremini because that’s what I had on hand. I added a bit of Red Pepper Flakes, salt, and pepper jack cheese as well.

    Turned out really good. I overstuffed them bc I love my filling haha but it turned out great. Had it in the oven for 35 minutes; chicken turned out so moist and tender!
