- 1 tsp. Cajun seasoning (I use Chachere's Creole Seasoning)
- 1/4 tsp. garlic powder
- 1 tsp. paprika
- 1/4 cup olive oil
- 3 slices bacon (cooked and crumbled)
- 1/2 cup onion (chopped)
- 1 red bell pepper (diced)
- 1/2 green bell pepper (diced)
- 3 Tbsp. tomato sauce (if you prefer a saucier dish, feel free to add ¼ cup)
- 1 cup polenta
- 2 cups chicken broth
- 2 cups milk
- 4 Tbsp. butter
- 1 1/2 tsp. salt
- 1/2 cup cheddar cheese (grated)
- 1/4 cup grated Parmesan
