- 4 oz. shredded cheddar cheese (I used yellow sharp cheddar)
- 2 garlic cloves (minced)
- 4 handfuls baby spinach (or other baby greens)

- pepper
- scallions (Optional: Chopped, or cilantro leaves for garnish)
