- 3 cloves garlic (minced)
- 2 tsp. Cajun seasoning (or you can make your own by combining dried oregano, salt, black pepper, and cayenne pepper like I did)
- 1 lb. large shrimp (peeled and deveined)

- pepper
- 4 Roma tomatoes (seeded and chopped)
- 2 bunches green onions (chopped)
- 1 1/2 cups cooked white rice (I had to delay everything else because I didn't notice that the rice was supposed to be cooked ahead of time)
- 1/4 cup water
- 3 Tbsp. fresh parsley (chopped)

I loved this recipe! It was very easy to make and was great heated up as leftovers as well. I definitely will be making this again.

Loved it. I had enough liquid that next time I will have a nice loaf of crusty bread to sop it up with.

I used canned diced tomatoes with chilies also added green pepper and some red onion. Recipe was very good and easy!
