- 1 cup Jasmine brown rice (uncooked)
- 2 cups water
- 1/2 tsp. fine sea salt
- 1 green bell pepper (small, finely chopped, small so it blends easily, about a cup)
- 1 cup white onion (or finely chopped yellow, 130g, half of a large onion)
- 30 oz. red kidney beans (salt-free, these are important as they mash well, drain & rinse)
- 1 tsp. garlic powder
- 1/2 tsp. dried thyme
- 3 tsp. Cajun seasoning (this is a blend from the store, with salt already added, start with 2 teaspoons and add more if desired. I used 3 for a strong flavor)
- 1 1/2 Tbsp. vegan Worcestershire sauce (I get a vegan brand from Whole Foods)
- 1 cup raw cashews (140 g, soaked overnight if you don't have a high-powered blender, see NOTES below for sub)
- 1/2 cup water
- 1 Tbsp. apple cider vinegar
- 1 1/2 tsp. Cajun seasoning (want it stronger, add more, just keep in mind the added salt)
- 1/2 tsp. dried thyme
- 1/8 tsp. cayenne pepper (this really drives home that cajun flavor and gives a nice kick of heat, use 1/16th if want it less spicy)
