- 1/2 cup celery (diced)
- 1/2 cup green pepper (diced)
- 4 cloves garlic (chopped)
- 4 cups broth (or chicken broth or chicken stock)
- 28 oz. red beans (rinsed and drained, or 3 cups cooked beans, from 1/ cup dry)
- 1 ham hock
- 1 tsp. paprika
- 1/2 tsp. cayenne pepper (or to taste)
- 1 tsp. oregano
- 1 tsp. thyme
- 2 bay leaves

So tasty! I will make this a lot in the future. It is a simple version of red beans & rice, using just sausage instead of sausage and ham or shoulder. I love the flavors. It makes fantastic leftovers.
