- 2 Tbsp. flour (I used bob’s red mill all-purpose, gluten-free flour mix)
- 2 stalks celery (minced)
- 1 onion (minced)
- 1 scallion (minced)
- 1 clove garlic (minced)
- 1/2 tsp. salt
- 1 pinch dried basil (dry oregano, dry thyme and allspice)
- Tabasco Pepper Sauce (to taste)
- worcestershire sauce (a tiny splash of)
- 2 carrots (sliced)
- dumpling dough (gluten-free or not)
- 2 cups meat (cooked duck, sliced or cubed, You could do one cup duck and one cup chicken if you like)
- 6 cups chicken stock (or duck stock)
- salt
- pepper
- parsley (minced, for garnish, optional)
- 1/2 cup all purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. scallions (minced, or snipped chives)
- 3 Tbsp. crisco (cold)
- 1/2 cup milk (plus 1 to 2 tablespoons)
- 1 1/4 cups brown rice flour
- 1 1/4 cups white rice flour
- 1 cup tapioca flour
- 1 cup sweet rice flour (also known as Mochiko)
- 2 xanthan gum (scant tsp.)
- 2 cups gluten free all purpose flour mix (Jeanne’s, sifted)
- 2 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 4 Tbsp. butter (60g; 2 oz, cold)
- 4 Tbsp. duck fat (60g; 2 oz, leaf lard or shortening, cold)
- 3/4 cup buttermilk (180ml, or milk mixed w/3/4 tsp of vinegar)
