- 16 oz. fettucine (noodles)
- 3 Tbsp. olive oil (divided)
- 1 lb. boneless, skinless chicken breasts (2-3 chicken breasts)
- 3 tsp. Cajun seasoning (divided)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne pepper (optional)
- 1 red bell pepper (thinly sliced)
- 1 orange bell pepper (or yellow, or half of each, thinly sliced)
- 1/2 red onion (large, sliced)
- 2 Tbsp. oil (from sun-dried tomatoes in oil jar)
- 1/2 cup sun dried tomato (halves, drained and finely chopped)
- 6 garlic cloves (minced)
- 2 Tbsp. all purpose flour
- 2 cups low sodium chicken broth
- 1 1/2 cups milk (I use lowfat)
- 1 Tbsp. cornstarch
- 1 Tbsp. tomato paste
- 1/2 tsp. Cajun seasoning
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 oz. 1/3-less-fat cream cheese (cubed)
- 3/4 cup freshly grated Parmesan
- lime juice (Freshly squeezed, highly recommended)
- cayenne pepper (to taste)
- fresh parsley

It turned out delicious! I put in about 1 cup of fresh spinach. (im not really a fan of alfredo so)I used less milk, about 1/2 cup, used about 1oz of cream cheese, used fire roasted tomatoes(that's what I had)didn't have any cornstarch still turned out great because if the sauce was any thicker the noodles probably would of soaked it all up & there would'nt have been any sauce. lol & as you can see I didn't use fettuccini noodles spaghetti worked just fine, I didn't use any salt except for a little in the pasta water, it wasn't missed at all. There was so much flavor in this dish! & it smelled delicious as it was cooking. Will definitely make again! Doesn't look like the picture but 🤷🏽♀️

This was okay. It took very long considering that in the end this was simply Cajun Alfredo and on top of that, the taste wasn’t as good as the picture made it look. Maybe it’s just the Cajun seasoning I used, but I found it to be subpar.

Great Recipe, definitely making it again! I didn't use corn starch and cream cheese really ain't necessary but does ass a great taste
