- 1 1/2 Tbsp. blackening spice (Cajun, like Paul Prudhomme’s brand)
- 2 Tbsp. butter (divided)
- 1 Tbsp. olive oil (or more if needed)
- 2 garlic cloves (minced)
- 1 cup grape tomatoes (halved)
- 1/4 cup dry white wine (or chicken broth)
- 1 1/2 cups heavy cream (or half-and-half)
- 1 1/2 cups cheeses (good quality, freshly grated Italian, I like a blend of Asiago, Parmesan, and Fontina.)
- 3 oz. herbed goat cheese (crumbled)
- 1 tsp. kosher salt (or more, to taste)
- 1/2 tsp. ground black pepper (or more, to taste)
- 1 lb. fettuccine (cooked)
- 1 pinch ground nutmeg (for garnish, optional)
- chopped parsley (for garnish, optional)

Great recipe. I used my own blackening seasoning recipe (spicier than Emeril’s) but followed the rest as is. The spiciness pairs great with the richness of the Alfredo sauce. Definitely will make again.
