- 1 egg yolk (coddled, see instructions)
- 1 tsp. anchovy paste
- 1 tsp. Dijon mustard
- 2 cloves garlic (crushed or very finely minced)
- 1 Tbsp. red wine vinegar
- 1/2 lemon
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 1 dash worcestershire sauce
- 1 drop Tabasco
- 2 Tbsp. Parmigiano Reggiano (grated on a microplane grater)
- 3 black pepper (grinds of fresh)
- 2 cups sourdough bread (day old, cut in 1 inch cubes - about 2 or 2½ cups)
- 7 cloves roasted garlic (see notes)
- 4 Tbsp. butter
- 1 tsp. fresh thyme leaves (minced)
- 2 heads romaine lettuce (outer leaves discarded)
- parmigiano-reggiano (grated - to taste)
