- 9 Tbsp. unsalted butter (divided)
- 3 Tbsp. all purpose flour
- 2 2/3 cups lowfat milk (or whole)
- 1/4 tsp. ground nutmeg (freshly)
- salt and ground black pepper
- 1 medium onion (chopped)
- 1 garlic clove (minced)
- 1 lb. cremini mushrooms (assorted, shiitake, oyster, porcini, chanterelles, etc. or just, thinly sliced)
- 1 Tbsp. chopped fresh sage (finely, I used less)
- 2 lb. napa cabbage (12 large leaves removed from the head, and reserved, the remainder sliced thin)
- 1/2 cup dry white wine
- 1 1/2 lb. yukon gold potatoes (about 4, sliced 1/8-inch thick)
- 1 cup grated Parmesan cheese (or Västerbotten, the chef’s preference.)
