- 15 oz. fire roasted diced tomatoes (drained)
- 30 oz. tomato sauce
- 4 cups beef broth (+ extra to thin soup at the end, if desired)
- 1 Tbsp. lemon juice (or white wine vinegar)

- cooked white rice (or cauliflower rice)
- shredded Parmesan cheese (or full-fat sour cream, omit if dairy-free)
