- 3 cups courgettes (grated, about 3 medium courgettes)
- 1 chopped onion
- 3 eggs
- 120 grams cheddar cheese (grated)
- 1/2 cup olive oil
- 2 1/2 cups plain flour
- 1 tsp. baking powder
- 1 garlic cloves (minced)
- 250 grams ham (or sausage, chopped, just use any meat you’ve got in your fridge)
- 1 Tbsp. salt
- 1 Tbsp. ground black pepper
- 1 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1 Tbsp. butter (for greasing)

Directions
- 2. Preheat the oven to 180°C (350°F), gas mark 4. Grease the cake tin (26cmm/10”)
- 3. In a large bowl mix together courgettes, onion, cheddar cheese, eggs, flour, baking powder, olive oil, garlic and finally meat. Add spices and mix through.
- 4. Transfer the mixture to the cake tin and bake for 1-1 ½ hours until risen and golden and it feels firm the touch.
- Leave the cake to cool in the tin for 10-20 minutes.
