- 1 lb. sweet potatoes (about 2 large, cut into 1/2'' cubes)
- 1 Tbsp. extra virgin olive oil
- pepper
- salt
- 2 apples (large, diced, granny smith, fuji, honeycrisp etc.)
- 8 cups baby greens (packed, arugula, kale, red romaine...a mix looks pretty)
- 1/4 cup flat leaf parsley
- 1/4 red onion (a medium, thinly sliced)
- dressing
- 1/4 cup apple cider vinegar
- 2 tsp. Dijon mustard
- 1/3 cup extra-virgin olive oil
- 1 pinch salt (and pepper)
