- 800 grams bone (shin, removed. Ask the butcher to slice it into six slices)
- 175 grams pork belly (chopped)
- 200 grams chorizo (sliced into ½cm circles)
- 300 mL red wine
- 100 mL beef stock
- 400 grams tomatoes
- 400 grams borlotti beans (tins, mixed and drained)
- 1 star anise
- 1 onion (large, finely chopped)
- 3 garlic cloves (finely chopped)
- 1 Tbsp. oregano
- 1 tsp. cumin seeds
- 1 chilli (ancho, dried, deseeded, available in Waitrose and M&S)
- 2 chillies (de arbol, £2.50 from www.souschef.co.uk, or 2 hot red chillies, finely chopped)
- 20 grams bitter chocolate (70 per cent cocoa solids, grated)
- 1 Tbsp. honey
- 2 Tbsp. chilli powder (to taste, optional)
- 1 handful fresh coriander (optional)
- 2 Tbsp. sour cream (optional)
