Description
These chickpea salad sliders are super easy to make, tastes great and make a great snack or appetizer! I just make this chickpea salad as if I was making a tuna or chicken salad, which we no longer eat. It is amazing to me how good chickpeas taste, and just how simple it is to make this healthy chickpea salad, which can be made in a matter of minutes. I just drained and rinsed the chickpeas, added them to my food processor, pulsed until I got the desired consistency, then put them into a bowl with the other ingredients, mixed well and presto…. a delicious, healthy snack in no time!
Ingredients
- 15 oz. chickpeas (cans, drained, rinsed)
- 3/4 cup celery (chopped)
- 3/4 cup red onion (chopped)
- 1 cup relish (dill)
- 1 cup mayo (Just)
- 2 tsp. mustard
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions
- Drain and rinse chickpeas.
- Put in food processor and pulse until desired consistency is obtained, then add to large bowl.
- Add celery, onion, relish, mix well.
- Stir in mayo and mustard. Mix well.
- Add salt and pepper, adjust as needed.
