- 14 oz. smoked sausage (or Polish sausage)
- 1/2 cup green pepper (chopped)
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 3 Tbsp. butter
- 4 oz. green chilis (drained)
- 14.5 oz. chicken broth
- 14.5 oz. diced tomatoes (undrained)
- 10 oz. spinach (frozen, chopped, I just put this in a colander, run some hot water over it to thaw and squeeze water out before adding to skillet)
- 3/4 cup instant rice (or long grain, can use either)
- 2 tsp. Cajun seasoning (I use my recipe for Cajun seasoning)
