- 1 head cauliflower (or ~3/4 of a large one)
- 4 Tbsp. unsalted butter (Kerrygold grassfed)
- sea salt (pink himalayan is best)

Directions
- wash cauliflower and cut leaves off
- fill a large pot with about 2 inches of water and place cauliflower in steamer basket. Place lid on top and turn burner on medium
- set timer for 30 min; cauliflower should be soft & fall apart when you stick a fork into it
- place in pieces in a food processor
- add the butter & about 12-15 grinds of sea salt. Blend for about 10-15 seconds, taste and add more salt or butter, if desired, then blend again for another 5 seconds
