Had to mash the beans and squash for it to stay together so it was kind of mushy but tasted good

it was delicious, but we didn't add enough cheese. the quesadilla fell apart, make sure you add enough cheese!!

This one turned out good and will be added to our regular dinner rotation. We used spicy hummus and we mashed our butternut squash after cooking. if you do the squash ahead of time and keep it in the fridge these can be awesome quick lunches

I was not overly enthused about this recipe. I didn’t like the hummus but it probably didn’t help I used regular hummus. Either way I didn’t like the entire combination of ingredients.

Wonderful! My family loved them.! The only revision is that I added za’atar seasoning to the kale.

The tortillas I used didn't get very crispy (my fault!) but the taste was pretty good!!

Absolutely delicious. I made them without modifying the recipe and they were great, but I also had one with onion added and I recommend it. For my non-vegetarian family I shredded leftover chicken and added that and some queso and they loved it. This is a great fall recipe that will be added to our regular rotation of dinners.

Great. We added turkey, used pine nut humus, and added red pepper flakes to the kale. Will be making this again!

I added a clove of minced garlic to the kale and used roasted red pepper hummus to add more flavor!

Was great and super easy. My local grocers were out of fresh butternut squash, so I had to use frozen instead and it was still great.

Very nice. I substituted the kale for spinach leaves as they're smoother when wilted. Next time I'll add some chilli for a kick and season with paprika.

Very yummy. Used sweet potato instead of butternut and some Cajun mix to give it a little extra flavor:)
