- 10 oz. frozen chopped spinach (package, heated and squeezed well)
- 15 oz. fat free ricotta cheese (I like Polly-o)
- 1/2 cup grated Parmesan cheese (fresh)
- 1 large egg
- salt
- pepper
- 9 Tbsp. italian blend cheese (part skim shredded, I used Sargento)
- 1 Tbsp. parsley (minced)

I have made this so many times and people always love it! Such a good veggie dish, it can hold it's own on the Thanksgiving table 👏👏

We enjoyed this in place of a regular lasagna made with béchamel sauce. The Ricotta is everything and goes well with the squash flavor.

Was honestly disappointed with this recipe it was boring and missing all the tangy sweet beneficial flavors of a tomato sauce as you use the squash as a sauce, butternut squash would have been better in planks to replace the lasagna pasta as with a summer squash lasagna.

We enjoyed this thoroughly. Not as labor-intensive as a lot a lasagnes. Could probably benefit from some additional herbs. Definitely would make again?

I make this all the time. I have adjusted the recipe over time, but it's the same basic idea. Love this.

What a delicious combination of flavours! A very creative use of a butternut squash, and a new twist on lasagne.
