- 1 Tbsp. coconut oil
- 3 garlic cloves (small, crushed)
- 1 red onion (medium, diced)
- 1 Tbsp. turmeric
- 1/2 tsp. cayenne pepper
- 1/2 tsp. paprika
- 1 pinch chilli flakes
- 1/2 tsp. ground coriander
- 1/2 red chilli (deseeded and finely chopped if you enjoy it hotter than add the whole chilli)
- 1/2 fresh lime (juice)
- 1 cup lentils (red split, 180g)
- 1 1/2 cans coconut milk
- 250 mL stock (I use Marigold)

Tasted delicious! Even my 12 yr old ate it. Didn’t have any fresh chilli so used more chilli flakes. Also used 3 large garlic cloves! Will cook again.
