- 2 1/2 cups butternut squash (diced)
- 1 1/2 cups chick peas (dried organic)
- 1 onion (small, chopped)
- 2 cloves garlic (minced)
- 1 can organic coconut milk (you can use light here, I didn’t)
- 1 bunch fresh spinach (rinsed and roughly chopped, you could also use kale here)
- 1 1/2 cups peas (freshly shelled, you can use frozen here, if you wish)
- 2 tomatoes (large, diced)
- 3 cups vegetable broth (or water)
- 3 Tbsp. curry powder (yellow, you can use your own blend of spices here, I just happen to have a premixed curry powder from a local indian grocery store that I love)
- 1 tsp. kosher salt
- 1 handful fresh cilantro (roughly chopped, save some for serving)

delish...added red pepper flakes and some sriracha cause i like it spicy. Used kale instead of the spinach.

Super yummy big hit! Used extra butternut and would add even more next time delicious and easy! I used kale instead of spinach and added extra garlic I added lots of extra salt and it still needed more also added some spicy curry spices have here to give it an extra kick! Perfect amount of heat very creamy

So. Good. Added about 4 cups of squash, but no other changes to the ingredients. Served with barley instead of rice. Will make this many more times!

Quite good. Nothing additional added with the exception of some corn starch to thicken.

Really good with very little effort required! I bought pre-cut butternut squash from Trader Joe’s so there was even less prep work needed.
