I didn't enjoy the breadcrumb taste or texture. Would much rather use leftover mashed potatoes or parboiled, grated potato as a binder. That being said, if the breadcrumbs don't bother you, the recipe was easy and came together as expected.

Pretty tasty! May need more cooking time in the oven. We had a few extra that wouldn't fit on the sheet pan, so we ended up frying them in canola oil. Kinda defeats the purpose of making a healthier food, but they were delicious.
