  • 1 1/2 cups yellow onion (peeled, cleaned,and diced small)
  • 5 cups butternut squash (peeled, seeded,and diced large)
  • 4 tablespoons roux (thickner)
  • 1/4 cup orange juice
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground clove
  • 2 teaspoons salt (or to taste, .06ounces)
  • 1 teaspoon ground white pepper (or to taste)
  • 2 tablespoons sugar
  • 2 cups heavy cream
  • 6 cups low sodium chicken stock
  • 4 tablespoons salted butter (or one half stick)
  • 2 cups celery (diced small)
  • 1 1/2 cups carrots (peeled and diced)

    Directions

    1. Melt butter in large pot
    2. Add onions, carrots, celery and butternut squash and sauté until translucent
    3. Add chicken stock, sugar, clove, nutmeg and orange juice and simmer for about 20 minutes until squash is cooked and tender
