- 2 Tbsp. unsalted butter
- 2 Tbsp. gluten free all purpose flour
- 2 cups milk (low-fat, I used 2% milk)
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1 1/4 cups butternut squash (puree, pumpkin puree also works)
- 1 cup mozzarella cheese (shredded part-skim, about 3.8 ounces/110g)
- 1 cup white cheddar cheese (shredded, about 3.8 ounces/110g)
- 1/3 cup shredded Parmesan cheese (about 2.3 ounces/65g)
- olive oil (for greasing baking dish)
- chopped parsley (finely, for topping, optional)
