- 1 red onion (cut into chunks)
- 2 red chillies (stalks removed and cut into three)
- 50 grams fresh ginger (/1¾oz, peeled and cut into thick coins)
- 2 garlic cloves (halved)
- 15 grams fresh turmeric (/½oz, peeled and roughly chopped, or 1 tsp ground turmeric)
- 1 tsp. ground coriander
- 1/2 tsp. ground cinnamon
- 1 tsp. sea salt flakes (or to taste)
- 2 Tbsp. coconut oil (or vegetable oil)
- 400 mL coconut milk
- 350 mL vegetable stock
- 400 grams chopped tomatoes
- 500 grams sweet potatoes (peeled and cut into large bite-sized pieces)
- 1 butternut squash (large, peeled, de-seeded and cut into bite-sized pieces)
- 300 grams rice (/10½oz black Venus, to serve)
- 1 handful coriander (roughly chopped)
- 2 limes (cut into wedges)

Rather nice indeed! ...I added chickpeas as well for protein! A bit time consuming but well worth the effort!
