Delicious, crispy, just a hint of kick with that cayenne, the dredging batter stays together in the oil very well. I used lemon juice in milk to replace buttermilk.
Smaller pieces fried quicker, large legs fry more toward 10 minutes, but it will burn if it’s allowed to sit 10 minutes on one side.
