- 1/2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1 tsp. sweet paprika
- 1/4 tsp. ground cinnamon
- 2 garlic cloves (minced)
- 2 Tbsp. garlic oil (or olive oil)
- 1 Tbsp. red pepper ( hot, paste, biber salcasi)
- 1 lemon (grated zest and juice of)
- 1 tsp. salt
- 1/4 tsp. coarse ground black pepper
- 1/2 onion (sliced)
- 8 chicken thighs (deboned, skinned and quartered)
- 2 green peppers (deseeded and cut into chunks)
- 2 red peppers (deseeded and cut into chunks)
- 1 red onion (peeled and quartered)
- pitas (or flatbread)
- 2 Tbsp. olive oil (or garlic oil, plus extra to brush)
- 1 Tbsp. spring onion (thinly sliced)
- 1 Tbsp. oregano leaves (picked)
- 12 garlic cloves (Confit, see ingredients below)
- 1 Tbsp. pickle (Quick-preserved Lemon, see ingredients below)
- 4 garlic bulbs (large, cloves separated and unpeeled)
- 3 sprigs herbs (woody, your choice, orgeano, lemon thyme, rosemary, 2 bay leaves)
- 600 mL olive oil (to cover)
- 3 lemons (zest of, cut into very thin strips)
- 3 lemons (juice of)
