- 1 head butter lettuce (torn into medium pieces)
- 1 pomelo (peeled and cut into suprêmes, See note below about reserving some juice.)
- 1 Cara Cara orange (peeled and cut into suprêmes)
- 10 picholine olives (or use both kinds)
- 8 Marcona almonds (– 10, or any roasted whole almonds)
- 2 tsp. white wine vinegar
- 1 tsp. lime juice
- 1 tsp. Meyer lemon juice
- 1 Tbsp. juice (pomelo, See note below.)
- 1 tsp. zest (grated, a Meyer lemon)
- 1 tsp. zest (grated, a pomelo)
- 1 pinch ground coriander (or, for a completely different take, finely crushed star anise)
- 1 pinch salt (plus more, to taste, if desired)
- 3 drops honey (or more to taste, depending on the tartness of your pomelo)
- 1/2 tsp. Dijon mustard
- 3 Tbsp. olive oil (to taste)
- white peppercorns (or Black)
