It was okay... The dressing had a bitter taste to it that may have been from the shallot? I’d rinse the shallot or soak a few minutes in ice water to see if that reduced the bitterness. Or, eliminate the red wine vinegar. I don’t think lemon AND vinegar are necessary and it may have created the under taste of bitterness, which after a few bites was unpleasant. Also, some honey would help to balance the flavors.
