- 800 grams chicken breast (or thigh, cut into 3 -4 cm cubes)
- 1 tsp. salt (flakes)
- 1/2 tsp. ground cumin
- 1/2 tsp. Garam Masala
- 1/2 tsp. food colouring (red Tandoori, optional)
- 1/2 tsp. ground turmeric
- 1/2 tsp. hot chilli powder (I use Kashmiri chilli powder)
- 70 grams Greek yoghurt (plus extra to serve)
- 2 Tbsp. ghee (or melted unsalted butter)
- 1/2 onion (finely minced)
- 2 garlic cloves (finely chopped)
- 1 tsp. ginger paste
- 2 brown cardamom pods (bruised)
- 1 tsp. ground coriander
- 1 tsp. Garam Masala
- 1 tsp. ground turmeric
- 1 tsp. chilli powder (hot Kashmiri)
- 1 Tbsp. fenugreek leaves
- 1 tsp. food colouring (red Tandoori)
- 400 grams tomatoes (crushed, or Enchilada sauce, recipe on page 105)
- 2 Tbsp. lemon juice
- 40 grams unsalted butter
- 100 grams cream (thickened)
- 2 tsp. gelatin
