Description
Indian butter chicken meets pizza in this quick dinner mash-up, and why not, when the results are so delicious? Packaged garlic naan flatbreads serve as individual pizza crusts, and creamy, slightly spicy butter chicken simmer sauce stands in for the usual red sauce. Pulled rotisserie chicken, melty cheese, and chopped red onion complete this awesome last-minute meal. Love spicy food? Look for a hot butter chicken sauce. Want some veggies? Feel free to add chopped bell pepper. The recipe is a Yummly original created by Ivy Manning.
Ingredients
- 1/2 rotisserie chicken (to make 2 cups pulled chicken)
- 1/4 red onion (to make 1/3 cup chopped)
- 4 garlic naan (about 5 oz. each)
- 3/4 cup chicken (butter, simmer sauce, mild to hot, such as Patak’s)
- 2 cups shredded mozzarella cheese (8 oz.)
- black pepper
- 1/4 cup cilantro leaves (or small sprigs, loosely packed)
Directions
- Preheat oven to 425°F.
- Pull chicken into bite-size pieces, discarding skin and bones, until you have about 2 cups meat. Finely chop onion and add it to the chicken. Set aside.
- Place flatbreads on two sheet pans. Spread 3 Tbsp. simmer sauce on each flatbread, leaving a small border uncovered around the edges. Arrange chicken and onions evenly over the sauce. Sprinkle 1/2 cup cheese over each flatbread. Grind or sprinkle pepper over each pizza.
- Bake pizzas, switching pan positions after 5 minutes, until the cheese melts and the edges of the flatbreads are crisp, 10-12 minutes total.
- Transfer pizzas to a cutting board and cut each into quarters. Sprinkle with cilantro.
