- 4 whole wheat tortillas (or store bought tortillas small enough to fit in a pie plate, approximately 8″)
- 1 Tbsp. oil
- 1 onion (large, diced)
- 2 carrots (small, finely chopped)
- 1 stalk celery (finely chopped)
- 2 bell peppers (small, finely chopped, or use 1 pepper and substitute 1/2 C your favorite salsa)
- 3 handfuls spinach (roughly chopped)
- 2 Tbsp. tomato paste
- 2 cups refried beans (or one 16 oz can)
- 3 Tbsp. taco seasoning (or one packet)
- salt
- pepper
- 3 cups cheese (cheddar, mozzarella or your favorite kind, or reduce the amount to about 1 – 1/2 C and just use cheese for one layer and the top)
