- 1 lb. ground turkey
- 1 pkg. taco seasoning
- 2 Tbsp. extra virgin olive oil
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 1 1/2 cups white rice (uncooked quick cook, I used rice from boil-in-a-bag)
- 1 1/2 cups low sodium chicken broth
- 1/2 cup salsa (I used my favorite jarred chunky salsa)
- 1/2 tsp. cumin
- 1/2 tsp. paprika
- 1 pinch red pepper flakes (optional)
- 1 pinch black pepper
- 1/2 tsp. salt
- 15 oz. black beans (drained and rinsed)
- 15 oz. pinto beans (drained and rinsed)
- 15 oz. petite diced tomatoes (including its juices)
- 1/2 cup sharp cheddar (Borden® Cheese, Shreds)
- 2 1/2 cups cheese (I used 2 cups of Borden® Cheese Finely Shredded Four Cheese Mexican Shreds and 1/2 cup Borden® Cheese Sharp Cheddar Shreds)
- green onions (diced)
- 1 handful cilantro (roughly chopped)
- fresh lime juice
