- 1/2 cup brown sugar

- 1 Tbsp. fresh ginger (grated)
- 4 cloves garlic (minced or grated)
- 2 Tbsp. sesame oil
- 10 corn (or floue tortillas, warmed)

- 6 tomatillos (skins removed)
- 2 Tbsp. Sriracha (Gochujang, can be substituted if needed*)
- 2 Tbsp. sesame oil
- 2 Tbsp. rice vinegar
- 2 Tbsp. low sodium soy sauce
- 2 limes (juice)
- 2 Tbsp. toasted sesame seeds
- 6 spring onions (or green onions)
- 2 cups green cabbage (shredded)
- 1 mango (small, cut into matchsticks)
- 1 jalapeno (+ 1 red fresno pepper OR 2 jalapeno peppers)
- 1/3 cup fresh cilantro (chopped)
- 1 Tbsp. low sodium soy sauce
- 2 tsp. rice vinegar

I just made the meat portion of this recipe. It was a little salty, but thats because I didn't have low sodium soy sauce. When I simmered the marinade down, I add about 1.5 tbsp more brown sugar (I used less in the marinade!!). To counter the saltiness, when I froze the leftovers, I put some pineapple juice into the sauce.
