Mine were amazing. I took the leftovers to the office and they're still raving about them. I replaced the Bleu cheese with feta though.

These were great, the fam loved them including toddler. I skipped the bleu and used ranch because we're not crazy about bleu cheese, but I'm sure if you're a bleu cheese lover, they would be great that way, as well. The crispy skin really made them; just be sure to season the potatoes before you top them and I don't think you could go wrong!
